Ingredients:
500ml of water
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cardamom
one pinch of ground cloves
one pinch of ground nutmeg
one pinch of ground black pepper
one teaspoon of black tea
Honey, jaggery, or brown sugar to taste (optional)
Milk of your choice to taste (optional)
Preparation:
Bring the water to a boil in a saucepan with the cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper. Let it simmer for a few minutes, turn off the heat, add the black tea, and allow all the spices and tea to infuse and cool down slightly. Strain the Chai into a mug and add honey (jaggery or brown sugar) and milk to taste.
To brew a perfect cup of Chai, it's crucial to use high-quality spices. I suggest obtaining your spices from suppliers such as Burlap and Barrel or Pure Indian Foods for this recipe.
